What is A Red Seal Chef?

A Red Seal Chef is a culinary professional who’s earned a nationally recognized certification. With a Red Seal, your skills are respected and transferable anywhere in Canada—from coast to coast.

How Apprenticeships Work

Start your journey with an apprenticeship: a mix of hands-on training and classroom learning. You’ll spend about 80% of your time gaining experience in a real kitchen (earning as you learn!) and 20% in technical classes.

Red Seal Training: What You’ll Learn

Level 1

Learn how to prepare stocks, soups, sauces, meats, seafood, vegetables, salads, sandwiches, pies, and desserts. 

Level 2

Explore menu planning, kitchen management, advanced techniques, new dishes, and pastry skills. 

Level 3

Master leadership, advanced menu design, charcuterie, specialty baking, and impressive desserts.

How We Support You

At The Old Spaghetti Factory, we’re committed to helping our apprentices succeed. We provide the right equipment, ensure you understand workplace safety, and pair you with an experienced mentor for hands-on training. You’ll get well-rounded experience in every area of the kitchen, sometimes at different locations. Plus, our executive chefs are always available for support and guidance.

You’ll choose and enroll in the school that works best for you. Once you successfully complete each level, we cover your tuition and textbooks. In return, we ask for a minimum two-year commitment after finishing the program.
